Ingredients

4 ripe but firm bananas

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 cup milk (dairy or non-dairy)

1 egg (or flax egg for a vegan option)

Vegetable oil (for frying)

1/2 cup unsalted butter

1/4 cup brown sugar

1 teaspoon vanilla extract

Extra cinnamon for dusting

Instructions

Prepare the Batter: In a mixing bowl, combine the flour, baking powder, salt, and 1 teaspoon of cinnamon. In another bowl, whisk together the milk and egg. Pour the wet ingredients into the dry ingredients and mix until just combined. The batter should be smooth and thick but pourable.

Slice the Bananas: Peel the bananas and slice them into half-lengthwise, then cut each half into thirds to create banana wedges.

Heat the Oil: In a deep skillet or frying pan, heat about 1 inch of vegetable oil over medium heat. You can test the heat by dropping a small spoonful of batter into the oil; it should sizzle and rise to the top immediately.

Fry the Bananas: Dip each banana wedge into the batter, shaking off any excess. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

Make the Cinnamon Butter Sauce: In a small saucepan, melt the butter over medium heat. Add the brown sugar, vanilla extract, and a pinch of salt. Stir until the sugar has dissolved. Add in 1/2 teaspoon of cinnamon and mix well. Allow to simmer for about 2-3 minutes until slightly thickened.

Serve: Drizzle the warm cinnamon butter sauce over the crispy fried bananas. Dust with additional cinnamon and serve immediately.
