1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 lb baby potatoes, halved (or quartered if large)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the halved baby potatoes, season with salt and pepper, and sauté for about 15-20 minutes, or until they are golden brown and tender, stirring occasionally. Remove them from the skillet and set aside.

    Cook the Chicken: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the chicken pieces, along with smoked paprika, Italian seasoning, salt, and black pepper. Cook the chicken for about 6-8 minutes, or until it's browned and cooked through, stirring occasionally.

      Add Garlic: Once the chicken is cooked, push it to one side of the skillet. On the empty side, add the minced garlic and sauté for about 1 minute, until fragrant. Then, mix the garlic with the chicken.

        Combine Everything: Return the cooked potatoes to the skillet and toss everything together, ensuring the potatoes and chicken are coated with the garlic butter. Heat everything through for another 2-3 minutes.

          Garnish and Serve: Remove the skillet from heat, sprinkle with fresh parsley, and serve immediately with lemon wedges on the side for a fresh zest.
