Ingredients
  

1 lb (450g) sirloin steak, cut into bite-sized pieces

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ¼ teaspoon dried thyme)

1 teaspoon fresh rosemary, finely chopped (or ¼ teaspoon dried rosemary)

Salt and pepper, to taste

2 tablespoons olive oil

Chopped fresh parsley, for garnish

Instructions
 

Prep the Potatoes: In a large pot, add the halved baby potatoes and cover with water. Bring to a boil and cook for about 10-15 minutes, until slightly tender. Drain and set aside.

    Cook the Steak: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Season the steak pieces with salt and pepper. Once the oil is hot, add the steak to the skillet in a single layer. Sear for 2-3 minutes until browned, then flip and cook for another 2 minutes for medium-rare. Remove the steak from the skillet and set aside.

      Sauté the Potatoes: In the same skillet, add the parboiled potatoes. Cook for about 5-7 minutes, stirring occasionally, until they are crispy and golden brown.

        Add Garlic and Herbs: Reduce the heat to medium-low and add the butter and minced garlic. Once the butter has melted, add thyme and rosemary. Toss in the crispy potatoes, mixing everything together well to coat the potatoes with the garlic butter.

          Combine: Return the steak to the skillet, tossing everything together to reheat the steak and mix the flavors. Cook for an additional 2 minutes until everything is heated through.

            Serve: Remove from heat, garnish with chopped parsley, and serve hot straight from the skillet.
