Garlic Butter Steak Bites and Potatoes

Ingredients
  

1 pound of sirloin steak, cut into bite-sized cubes

1 pound baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preparation of Potatoes:

    - In a saucepan, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until they are just fork-tender. Drain and set aside.

      Season the Steak:

        - While the potatoes are boiling, season the steak bites with salt and pepper.

          Sear the Potatoes:

            - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the boiled potatoes and cook for about 5-7 minutes, turning occasionally, until they’re golden brown and crisp. Transfer to a plate and set aside.

              Cook the Steak Bites:

                - In the same skillet, add 2 tablespoons of butter. Once melted, add the seasoned steak bites in a single layer (you might need to do this in batches). Sear for about 2-3 minutes per side for medium-rare, or adjust cooking time to your desired doneness. Remove the steak bites and set aside.

                  Make the Garlic Butter Sauce:

                    - Reduce the heat to medium, then add the minced garlic, rosemary, and thyme into the skillet. Sauté for about 1 minute, stirring frequently, until the garlic is fragrant but not burnt.

                      - Return the steak bites to the skillet and toss them in the garlic-herb butter, coating them well.

                        Combine & Serve:

                          - Add the crispy potatoes back into the skillet, tossing to combine everything together. Cook for about 2 more minutes just to heat through.

                            - Garnish with chopped parsley and serve immediately.
