Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

2 tablespoons olive oil

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Potatoes: In a mixing bowl, toss the halved baby potatoes with olive oil, salt, pepper, and half of the minced garlic. Spread them out in a single layer on a baking sheet.

      Roast Potatoes: Roast the potatoes in the preheated oven for 25-30 minutes, or until golden brown and tender, tossing them halfway through for even cooking.

        Cook Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter to the skillet along with the steak bites. Sprinkle with the dried rosemary, smoked paprika, salt, and pepper.

          Sear the Steaks: Cook the steak bites for about 3-5 minutes, stirring occasionally, until they are browned and cooked to your desired level of doneness. Remove the steak bites from the skillet and set them aside.

            Make Garlic Butter: In the same skillet, reduce the heat to medium, add the remaining 2 tablespoons of butter and the rest of the minced garlic. Cook for about 1-2 minutes until the garlic is fragrant but not burnt.

              Combine Ingredients: Return the cooked steak bites to the skillet, tossing them in the garlic butter mixture until evenly coated. Let them cook together for another minute to absorb the flavors.
