1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

Juice of 1 lime

For the Corn Salsa:

1 cup corn kernels (fresh or frozen)

1 small red onion, diced

1 medium tomato, diced

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt

2 tablespoons mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper, to taste

For Assembly:

4 cups cooked rice (white or brown)

1 ripe avocado, sliced

Fresh lime wedges, for serving

Extra cilantro, for garnish

Instructions
 

Marinate the Shrimp:

    In a large bowl, combine the shrimp with olive oil, minced garlic, smoked paprika, cumin, salt, pepper, and lime juice. Toss to coat and let marinate for at least 15 minutes.
