1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 ripe avocado, diced

1 cup corn kernels (fresh or frozen)

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup cilantro, chopped

Juice of 1 lime

1/2 cup sour cream

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Marinate the Shrimp: In a bowl, combine the olive oil, smoked paprika, garlic powder, salt, and pepper. Add the shrimp and toss to coat. Let marinate for 15-30 minutes.

    Make the Corn Salsa: In a separate bowl, mix together the corn, red onion, cherry tomatoes, cilantro, lime juice, and a pinch of salt. Set aside to allow the flavors to meld.

      Prepare the Creamy Garlic Sauce: In a small bowl, whisk together the sour cream, minced garlic, lemon juice, Dijon mustard, and a pinch of salt. Adjust seasoning to taste and set aside.
