Ingredients
  

1 lb ground turkey

2 large sweet potatoes, peeled and diced

1 medium onion, diced

2 garlic cloves, minced

1 cup bell peppers (any color), diced

1 cup corn (fresh or frozen)

1 cup black beans, drained and rinsed

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

2 tablespoons olive oil

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot, bring water to a boil. Add the diced sweet potatoes and cook for about 10-15 minutes or until fork-tender. Drain and set aside.

      In a large skillet over medium heat, add olive oil. Once hot, sauté the diced onion and garlic until translucent, about 3-4 minutes.

        Add the ground turkey to the skillet and cook until browned, breaking it up with a spatula, about 5-7 minutes.

          Stir in the bell peppers, corn, black beans, chili powder, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes until the peppers soften and everything is well combined.

            In a large mixing bowl, combine the cooked sweet potatoes with the turkey and vegetable mixture. Stir well until the sweet potatoes are evenly incorporated.

              Transfer the mixture to a greased baking dish. If desired, sprinkle shredded cheddar cheese on top for a deliciously gooey finish.

                Bake in the preheated oven for 20-25 minutes, or until bubbly and the cheese is melted and slightly golden.

                  Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
