Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, diced into small cubes

1 red bell pepper, chopped

1 small yellow onion, chopped

2 cloves garlic, minced

2 tsp smoked paprika

1 tsp cumin

1 tsp dried oregano

Salt and pepper, to taste

2 tbsp olive oil

1 cup kale or spinach, roughly chopped

1/4 cup fresh parsley, chopped (for garnish)

Optional: red pepper flakes for heat

Instructions
 

Prep the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and sprinkle with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they begin to soften and turn golden brown.

    Sauté the Vegetables: Add the remaining tablespoon of olive oil to the skillet along with the chopped onion and bell pepper. Sauté for 4-5 minutes, or until the onion becomes translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Cook the Turkey: Push the sweet potatoes and vegetables to one side of the skillet and add the ground turkey to the other side. Break it up with a spoon and cook for about 5-7 minutes until it turns from pink to brown.

        Season the Mixture: Once the turkey is cooked, combine it with the sweet potatoes and vegetables. Add in the smoked paprika, cumin, oregano, and any additional seasonings like red pepper flakes if desired. Stir everything together and cook for another 5 minutes to allow the flavors to meld.

          Add the Greens: Stir in the chopped kale or spinach and cook for an additional 2-3 minutes until the greens are wilted. Taste and adjust seasoning if necessary.
