1 lb ground turkey

2 cups mixed vegetables (bell peppers, broccoli, snap peas, and carrots)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 green onions, sliced (for garnish)

1 teaspoon sesame seeds (for garnish)

Cooked rice or quinoa (to serve)

Instructions
 

Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey (or maple syrup), and sesame oil. Set aside.

    Cook the Turkey: In a large skillet or wok over medium heat, add the ground turkey. Cook for about 5-7 minutes, breaking it apart with a spatula until it’s fully cooked and browned.

      Add Aromatics: Add minced garlic and ginger to the turkey, stirring frequently to avoid burning, and cook for another 2 minutes until fragrant.

        Stir-Fry Vegetables: Increase the heat to medium-high, and toss in the mixed vegetables. Cook for 3-4 minutes, stirring frequently, until they are tender but still crisp.

          Add Sauce: Pour the teriyaki sauce over the turkey and vegetables. Stir well to combine.

            Thicken the Sauce: Stir in the cornstarch mixture. Continue to cook for another 2 minutes until the sauce has thickened.

              Serve: Remove from heat and serve the stir fry over cooked rice or quinoa. Garnish with green onions and sesame seeds.
