For the Hibachi Chicken:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons soy sauce

2 tablespoons vegetable oil

1 tablespoon garlic, minced

1 tablespoon ginger, minced

1 tablespoon sesame oil

1 teaspoon black pepper

2 green onions, sliced for garnish

For the Fried Rice:

3 cups cooked jasmine rice (preferably day-old)

2 eggs, beaten

1 cup mixed vegetables (peas, carrots, and corn)

3 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons green onions, sliced

Salt and pepper to taste

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, black pepper, garlic, ginger, and sesame oil. Let it marinate for at least 15 minutes.

    Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken and cook for about 7-10 minutes, or until cooked through and golden brown. Remove from the skillet and set aside.

      Prepare the Fried Rice:

        - In the same skillet, add a little more oil if needed, and scramble the beaten eggs until fully cooked. Push them to the side of the skillet.

          - Add the mixed vegetables to the pan, and stir-fry for a couple of minutes until tender.

            - Add the day-old rice, soy sauce, sesame oil, and mix everything together. Stir-fry for another 3-5 minutes until everything is heated through. Season with salt and pepper as needed.

              Combine: Add the cooked chicken back to the skillet with the fried rice, and gently toss to combine everything evenly. Cook for an additional minute to ensure everything is hot.
