2 large sweet potatoes

1 lb ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder (adjust to taste)

Salt and pepper to taste

1 cup black beans, drained and rinsed

½ cup corn (fresh or frozen)

½ cup salsa (your choice of spiciness)

¼ cup Greek yogurt (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork several times and place them on a baking sheet. Bake in the preheated oven for about 45-60 minutes until tender when pierced with a fork.

    Cook the Ground Turkey: While the sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and bell pepper, cooking for another 2-3 minutes until softened.

      Season the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes until it’s browned and cooked through. Drain any excess fat if necessary.

        Add the Spices and Beans: Stir in the cumin, smoked paprika, chili powder, salt, and pepper. Mix well. Then, add the black beans and corn, followed by the salsa. Let everything simmer together for about 5 minutes to allow flavors to meld.

          Assemble the Dish: Once the sweet potatoes are fully cooked, remove them from the oven and let them cool slightly. Slice each sweet potato in half lengthwise and gently scoop out some of the flesh to create a pocket for the filling (you can mix this flesh into the turkey filling if desired).
