Honey Butter Chicken

4 boneless, skinless chicken thighs

1 cup buttermilk

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup all-purpose flour

1/2 cup honey

1/4 cup unsalted butter, melted

1 teaspoon dried thyme

1/2 teaspoon cayenne pepper (adjust for heat preference)

Fresh chopped parsley, for garnish

Marinate the Chicken: In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken thighs and ensure they are well-coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.

    Prepare the Honey Butter Mix: In a small bowl, whisk together the melted butter, honey, dried thyme, and cayenne pepper. Set aside.

      Coat the Chicken: Preheat your oven to 375°F (190°C). Remove the chicken from the buttermilk marinade and let any excess drip off. Dredge each thigh in the flour, ensuring an even coating.

        Fry the Chicken: In a large skillet over medium heat, add enough oil to cover the bottom (about 1/2 inch deep). Once hot, gently place the floured chicken thighs in the oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy. You may need to do this in batches.

          Bake the Chicken: Once fried, transfer the chicken thighs to a baking dish. Drizzle half of the honey butter mixture over the chicken. Bake in the preheated oven for 20-25 minutes, until cooked through.

            Glaze: Remove the chicken from the oven and brush the remaining honey butter on top for an extra glaze. Return to the oven for an additional 5 minutes.

              Serve: Once done, let the chicken rest for a few minutes before serving. Garnish with fresh chopped parsley and serve warm with your choice of sides.
