Ingredients
  

1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tbsp unsalted butter

3 tbsp honey

4 cloves garlic, minced

1 tsp sea salt

½ tsp black pepper

1 tsp fresh thyme leaves (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    In a small saucepan, melt the unsalted butter over low heat. Add the honey and minced garlic, stirring constantly until well combined. Remove from heat.

      In a large bowl, combine the baby carrots with sea salt and black pepper. Pour the honey garlic butter mixture over the carrots and toss until they are evenly coated.

        Spread the carrots out in a single layer on the prepared baking sheet. If using, sprinkle fresh thyme leaves over the top for added flavor.

          Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even roasting.

            Once cooked, remove the carrots from the oven and garnish with freshly chopped parsley before serving.
