Honey Lime Chicken & Avocado Rice Stack

For the Honey Lime Chicken:

4 boneless, skinless chicken breasts

1/4 cup honey

1/4 cup lime juice (freshly squeezed)

2 cloves garlic, minced

1 teaspoon lime zest

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons olive oil

For the Avocado Rice:

2 cups cooked jasmine rice

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

Salt and pepper to taste

For Assembly:

Lime wedges, for garnish

Extra cilantro, for garnish

Marinate the Chicken: In a medium bowl, whisk together the honey, lime juice, minced garlic, lime zest, ground cumin, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Rice: In a separate bowl, combine the cooked jasmine rice, diced avocado, chopped cilantro, lime juice, salt, and pepper. Mix gently to not mash the avocado. Set aside.

      Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and add it to the skillet. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden caramelization. Use a meat thermometer; the internal temperature should reach 165°F (75°C).

        Slice the Chicken: Once cooked, transfer the chicken to a cutting board and allow it to rest for a few minutes before slicing into strips.
