Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup whole milk

1 large egg

2 tablespoons melted butter

1/2 cup mini marshmallows

1/2 cup chocolate chips

1/2 cup crushed graham crackers

Extra chocolate chips and marshmallows for topping

Optional: whipped cream for serving

Instructions

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

In a separate bowl, mix the milk, egg, and melted butter until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Fold in the mini marshmallows, chocolate chips, and crushed graham crackers into the batter, reserving a bit of each for topping.

Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip the pancakes and cook for an additional 1-2 minutes, until golden brown. Remove from skillet and keep warm.

                Repeat with the remaining batter.

Serve pancakes stacked high, topped with extra chocolate chips, marshmallows, crushed graham crackers, and a drizzle of chocolate sauce if desired. Add a dollop of whipped cream for an extra indulgent touch!
