Ingredients

1 cup apple cider

1 cup all-purpose flour

¾ cup whole wheat flour

½ cup granulated sugar

½ cup brown sugar, packed

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

2 large eggs

½ cup unsweetened applesauce

¼ cup vegetable oil

1 teaspoon vanilla extract

¼ cup melted butter (for coating)

¼ cup granulated sugar mixed with 1 tablespoon cinnamon (for coating)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray or brush with a little vegetable oil.

Reduce the Apple Cider: In a small saucepan, bring the apple cider to a boil over medium heat. Allow it to simmer for about 10-15 minutes, or until it reduces to about ½ cup. Let it cool slightly.

Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well-combined.

Combine Wet Ingredients: In another bowl, whisk together the eggs, applesauce, vegetable oil, vanilla extract, and the reduced apple cider. Mix until smooth.

Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Fill the Donut Pan: Spoon the batter into the prepared donut pan, filling each cavity about ¾ full. You can use a piping bag or a zip-lock bag with a corner snipped off for easier filling.

Bake: Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Cool and Coat: Allow the donuts to cool in the pan for about 5 minutes, then carefully remove them and place them on a wire rack. While they’re still warm, brush each donut with melted butter and then roll in the cinnamon-sugar mixture until fully coated.

Serve and Enjoy: Let the donuts cool completely on the rack. These donuts are best enjoyed fresh but can be stored in an airtight container for a few days.
