Ingredients

2 cups apple cider

2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

2 large eggs

1/2 cup unsweetened applesauce

1/2 cup whole milk

2 tablespoons melted butter

1 teaspoon vanilla extract

1/2 cup cinnamon sugar (for coating)

Instructions

Reduce the Apple Cider: In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat to low and simmer until it is reduced to about 1 cup, which should take around 15-20 minutes. Let it cool slightly.

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or lightly oil it.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Combine Wet Ingredients: In another bowl, combine the eggs, reduced apple cider, applesauce, milk, melted butter, and vanilla extract. Mix well until all ingredients are smoothly incorporated.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold them together until just combined. Be careful not to over-mix; you should see a few lumps.

Fill the Donut Pan: Spoon the batter into the donut pan, filling each cavity about 2/3 full. You can use a piping bag for a mess-free transfer or a spoon.

Bake the Donuts: Place the pan in the preheated oven and bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Coat: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack. Once they are slightly warm, roll them in the cinnamon sugar until fully coated.

Serve: Serve warm or at room temperature. Enjoy your delicious baked apple cider donuts!
