1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup brown sugar, packed

1 tbsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

½ tsp salt

½ cup unsalted butter, melted and slightly cooled

2 large eggs

1 tsp vanilla extract

½ cup buttermilk (or milk mixed with 1/2 tsp vinegar)

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

1 tsp additional cinnamon and sugar mix for topping (1 tsp sugar mixed with ½ tsp cinnamon)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth and well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; the batter should be slightly lumpy.

          Fold in Apples and Nuts: Gently fold in the diced apples and chopped nuts (if using) until evenly distributed throughout the batter.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle a little cinnamon sugar mix on top of each muffin for extra flavor and crunch.

              Bake: Bake the muffins in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
