8 oz linguine pasta

1 lb shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 bell pepper (red or yellow), diced

1/2 cup coconut milk

1/2 cup heavy cream

1 tablespoon Jamaican jerk seasoning

Salt and black pepper, to taste

1 cup spinach, fresh

1/4 cup grated Parmesan cheese

2 tablespoons fresh lime juice

Chopped fresh cilantro or parsley, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the shrimp and season with salt, black pepper, and half of the jerk seasoning. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Cook the Veggies: In the same skillet, add a little more olive oil if necessary. Sauté the minced garlic, chopped onion, and diced bell pepper for about 3-4 minutes until the onions are translucent.

        Make the Creamy Sauce: Reduce the heat to medium. Pour in the coconut milk and heavy cream, stirring to combine. Add the remaining jerk seasoning, and bring the mixture to a simmer. Allow it to cook for 3-5 minutes until slightly thickened.

          Combine Everything: Add the cooked linguine, sautéed shrimp, and fresh spinach to the creamy sauce. Toss everything together until well combined. Cook for an additional 2 minutes until the spinach wilts and everything is heated through.

            Finish and Serve: Remove from heat and stir in the lime juice and grated Parmesan cheese. Taste and adjust seasoning, if necessary. Serve immediately, garnished with chopped cilantro or parsley.
