Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or ground pork)

1/2 cup breadcrumbs

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1/2 teaspoon black pepper

1 teaspoon sesame seeds (for garnish)

Optional: 1 tablespoon Gochujang (Korean chili paste) for an extra kick

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon sriracha (or to taste)

1 teaspoon lime juice

1 teaspoon soy sauce

Optional: 1 teaspoon sesame oil for added flavor

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large bowl, combine the ground beef (or pork), breadcrumbs, green onions, minced garlic, minced ginger, soy sauce, sesame oil, brown sugar, black pepper, and Gochujang if using. Mix until well combined but do not overwork the meat.

      Shape the Meatballs: Using your hands, form the mixture into meatballs about 1 inch in diameter and place them on the lined baking sheet.

        Bake the Meatballs: Bake in the preheated oven for about 20-25 minutes, or until they are cooked through and have a slight golden crust.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, in a small bowl, mix together mayonnaise, sriracha, lime juice, soy sauce, and sesame oil until smooth. Adjust the heat to your liking by adding more sriracha if desired.

            Serve: Once the meatballs are finished, remove them from the oven and transfer them to a serving platter. Drizzle with sesame seeds and additional green onions for garnish. Serve hot with the spicy mayo dip on the side.
