Ingredients

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup panko breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tbsp ginger, finely grated

1/4 cup soy sauce

1 tbsp sesame oil

1 tbsp brown sugar

1 tsp black pepper

1/2 tsp red pepper flakes (adjust to spice preference)

1 egg, beaten

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp sriracha sauce (more or less to taste)

1 tsp lemon juice

1 tsp sesame oil

Optional: sprinkle of sesame seeds for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy clean-up.

Mix the Meatball Ingredients: In a large bowl, combine the ground beef, panko breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, brown sugar, black pepper, red pepper flakes, and the beaten egg. Use your hands or a spatula to mix until just combined. Avoid overmixing to keep the meatballs tender.

Form the Meatballs: Using your hands, form the mixture into small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them out evenly.

Bake the Meatballs: Bake in the preheated oven for about 20-25 minutes, or until they are cooked through and have a nice golden brown exterior. The internal temperature should reach 160°F (70°C).

Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, whisk together the mayonnaise, sriracha sauce, lemon juice, and sesame oil until smooth. Adjust the spiciness by adding more or less sriracha to your liking.

Serve: Once the meatballs are done baking, remove them from the oven and let them cool for a few minutes. Serve warm alongside the spicy mayo dip, garnished with sesame seeds if desired.

Enjoy: Gather your friends or family and enjoy these flavorful Korean BBQ meatballs as a delightful appetizer or main course.
