1 lb ground beef (preferably grass-fed)

¼ cup soy sauce (low-sodium recommended)

2 tablespoons brown sugar

1 tablespoon sesame oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon gochugaru (Korean red pepper flakes) or to taste

3 green onions, chopped (white and green parts separated)

2 large carrots, julienned

1 cup cooked rice (white or brown)

1 cup steamed broccoli florets

Sesame seeds for garnish

Optional: fried egg (1 per bowl)

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook, stirring occasionally, until browned and fully cooked (about 5-7 minutes). Drain excess fat if necessary.

    Make the Sauce: In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, ginger, rice vinegar, and gochugaru.

      Combine: Once the beef is cooked, lower the heat, and pour the sauce over the meat. Stir in the white parts of the green onions and julienned carrots. Cook for an additional 2-3 minutes until the carrots are slightly tender.

        Assemble the Bowl: Place a serving of cooked rice in a bowl, top with the Korean ground beef mixture, and add steamed broccoli on the side.

          Garnish: Sprinkle sesame seeds over the dish and add a fried egg on top if desired. Finish with the remaining green onion tops.
