1 lb ground beef (80/20 blend)

4 cloves garlic, minced

1 tablespoon ginger, grated

¼ cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon gochujang (Korean red chili paste)

1 teaspoon rice vinegar

2 green onions, chopped

1 teaspoon sesame seeds

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup baby spinach

1 tablespoon vegetable oil

Sliced cucumbers and radishes for garnish (optional)

Cook the Ground Beef: In a large skillet, heat the vegetable oil over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.

    Flavor the Beef: Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

      Add the Sauce: In a separate bowl, whisk together the soy sauce, brown sugar, sesame oil, gochujang, and rice vinegar. Pour this mixture over the cooked beef, stirring to coat evenly. Simmer for another 2-3 minutes to let the flavors meld.

        Prepare Vegetables: In another pan, lightly sauté the shredded carrots and baby spinach in a small amount of vegetable oil for 2-3 minutes until just tender. Season with a pinch of salt.

          Assemble the Bowls: In each serving bowl, add 1 cup of cooked jasmine rice as a base. Top it with a generous serving of the spicy ground beef, followed by the sautéed vegetables.

            Garnish: Sprinkle chopped green onions and sesame seeds over the top. Optionally, add sliced cucumbers and radishes for a fresh crunch.
