Ingredients

8 oz whole grain pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 cup fresh basil leaves, torn

1/4 cup olive oil

2 tablespoons lemon juice (freshly squeezed)

1 teaspoon lemon zest

1 teaspoon garlic powder

Salt and pepper to taste

1/4 cup nutritional yeast (optional, for a cheesy flavor)

Instructions

Cook the Pasta: In a large pot, bring water to a boil. Add a pinch of salt and the whole grain pasta. Cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

Prep the Veggies: While the pasta is cooking, prepare the cherry tomatoes, cucumber, and red onion by chopping them as directed.

Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, and pepper until well combined.

Combine Ingredients: In a large mixing bowl, add the cooked pasta, chopped vegetables, and fresh basil. Pour the dressing over the salad and toss gently to combine.

Optional Add-In: If using nutritional yeast, sprinkle it over the salad and mix until evenly distributed for a savory flavor.

Chill: Let the pasta salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Serve: Toss again before serving, adjust seasoning if needed, and enjoy this refreshing Lemon Basil Pasta Salad.
