Lemon Garlic Shrimp Pasta With Spinach

8 oz spaghetti or linguine pasta

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Juice of 1 lemon (about 2 tablespoons)

Zest of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

4 cups fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese, plus more for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or linguine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the shrimp in a single layer. Season with salt and pepper. Cook for about 2 minutes on one side, until pink, then flip to the other side and cook for an additional 1-2 minutes until fully cooked. Remove shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.

        Add Lemon: Pour in the lemon juice and lemon zest, then sprinkle in the red pepper flakes. Stir to combine and let it simmer for about 1 minute.

          Combine Ingredients: Add the chopped spinach to the skillet, cooking until wilted. Return the cooked shrimp to the skillet. Toss everything together, adding the cooked pasta. If the mixture seems dry, gradually add some reserved pasta water until the desired consistency is reached.

            Finish with Cheese: Stir in the grated Parmesan cheese, mixing well until melted and creamy throughout. Adjust seasoning with more salt, pepper, or lemon juice as needed.
