Ingredients

2 boneless, skinless chicken breasts

1 cup Italian breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup all-purpose flour

2 large eggs, beaten

1/4 cup milk

1/4 cup olive oil (for frying)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Begin by preheating your oven to 400°F (200°C). Place the chicken breasts between two pieces of plastic wrap or parchment paper and pound them to an even thickness of about 1/2 inch for uniform cooking.

Set Up Breading Station: In a shallow dish, combine the Italian breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, salt, and black pepper. In another shallow dish, place the flour. In a third shallow dish, whisk together the beaten eggs and milk.

Coat the Chicken: Dredge each chicken breast in the flour, shaking off the excess. Next, dip it into the egg mixture until fully coated. Finally, press the chicken into the breadcrumb and Parmesan mixture, ensuring it's evenly coated on both sides.

Fry the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully lay the breaded chicken breasts in the skillet. Fry for about 3-4 minutes on each side, or until golden brown and cooked through (internal temperature reaches 165°F or 75°C). You may need to do this in batches to avoid crowding the pan.

Bake for Finish: Transfer the fried chicken to a baking dish and place it in the preheated oven. Bake for an additional 10-15 minutes to ensure the chicken is cooked through and the coating is crispy.

Garnish and Serve: Remove from the oven and let the chicken rest for a couple of minutes. Garnish with chopped fresh parsley before serving.

Enjoy your delicious Longhorn Parmesan Crusted Chicken, perfect alongside a fresh salad or some creamy mashed potatoes!
