1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 medium zucchini, sliced

1 cup broccoli florets

1 cup cauliflower florets

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1 cup low-sodium chicken broth

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Skillet: In a large skillet or frying pan, heat the olive oil over medium-high heat.

    Cook the Chicken: Add the chicken pieces to the skillet. Season with salt, pepper, and half of the Italian herbs. Cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.

        Add Remaining Vegetables: Stir in the bell pepper, zucchini, broccoli, and cauliflower. Cook for another 5 minutes, stirring regularly until the vegetables are tender but still crisp.

          Combine and Simmer: Return the cooked chicken to the skillet. Pour in the chicken broth and add the remaining Italian herbs, along with the lemon juice. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let simmer for about 10 minutes, allowing the flavors to meld.

            Check Seasoning: Taste and adjust seasoning with more salt, pepper, or lemon juice if necessary.

              Serve: Garnish with fresh parsley and serve warm, straight from the skillet.
