One Pot French Onion Pasta

12 oz (340g) pasta (fusilli or penne work great)

2 large yellow onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup shredded Gruyère cheese

1 cup shredded mozzarella cheese

2 tablespoons olive oil

2 tablespoons butter

1 teaspoon dried thyme

1 teaspoon sugar

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

In a large pot over medium heat, add olive oil and butter. Once melted, add the sliced onions. Sprinkle with sugar to help caramelize. Cook, stirring occasionally, for about 15-20 minutes until onions are golden brown and sweet.

    Stir in the minced garlic and dried thyme; cook for an additional minute until fragrant.

      Add the dry pasta to the pot, followed by the vegetable broth. Stir to combine, making sure the pasta is submerged in the liquid. Bring to a boil.

        Reduce the heat to low, cover the pot, and simmer for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.

          Once the pasta is cooked, stir in the heavy cream and shredded Gruyère and mozzarella cheeses until melted and creamy. Season with salt and pepper to taste.

            Remove from heat and garnish with chopped fresh parsley. Serve hot and enjoy your comforting One Pot French Onion Pasta!
