One Skillet Salmon with Lemon Orzo

4 salmon fillets, skin-on

1 cup orzo pasta

2 tablespoons olive oil

3 cups low-sodium chicken or vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

Zest and juice of 1 lemon

1 cup cherry tomatoes, halved

1 cup baby spinach

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Sear the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Place the fillets skin-side down in the skillet and cook for about 4-5 minutes until the skin is crispy. Carefully flip the salmon and cook for another 3-4 minutes, or until the salmon is cooked through. Remove the salmon from the skillet and set aside.

    Cook the Orzo: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the Broth and Orzo: Pour in the chicken or vegetable broth and bring to a simmer. Add the orzo pasta and cook according to package instructions, about 8-10 minutes, stirring occasionally, until al dente and the liquid is mostly absorbed.

        Incorporate Lemon and Veggies: Once the orzo is cooked, stir in the lemon zest, lemon juice, halved cherry tomatoes, and baby spinach. Cook for an additional 2-3 minutes until the spinach is wilted and the tomatoes are slightly softened. Season with salt and pepper to taste.

          Combine and Serve: Gently place the seared salmon back on top of the orzo. Allow it to warm through for a minute. Remove from heat and garnish with freshly chopped parsley. Serve with lemon wedges on the side.
