1 pound Italian sausage (casings removed)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, diced

2 stalks celery, diced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

6 cups chicken broth

1 can (14.5 oz) diced tomatoes, undrained

1 package (9 oz) cheese tortellini

2 cups fresh spinach

1 tablespoon olive oil

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Instructions
 

Sauté the sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Remove the cooked sausage and drain excess fat if needed.

    Cook the aromatics: In the same pot, add the diced onion, carrots, and celery. Cook for about 5 minutes until the vegetables are softened. Stir in the garlic, oregano, basil, and red pepper flakes, cooking for an additional minute until fragrant.

      Add liquid ingredients: Pour in the chicken broth and add the diced tomatoes (with their juice). Bring to a boil.

        Tortellini time: Once boiling, add the tortellini to the pot and reduce heat to simmer. Cook according to package instructions, usually around 3-5 minutes until tender.

          Finish the soup: After the tortellini is cooked, return the sausage to the pot and stir in the fresh spinach. Cook for an extra 2-3 minutes until the spinach wilts.

            Season and serve: Taste the soup and season with salt and pepper as needed. Ladle into bowls, sprinkle with grated Parmesan cheese, and enjoy!
