Savory Japanese BBQ Chicken Fried Rice Extravaganza

2 cups cooked jasmine rice (preferably day-old)

1 pound boneless, skinless chicken thighs, diced

3 tablespoons Japanese BBQ sauce (like Yakitori sauce)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced

1 small onion, finely chopped

1 cup mixed vegetables (carrots, peas, bell peppers)

2 large eggs, beaten

3 green onions, thinly sliced

Sesame seeds, for garnish

Salt and pepper to taste

Marinate the Chicken: In a bowl, combine diced chicken with Japanese BBQ sauce. Let it marinate for at least 15 minutes while you prepare the other ingredients.

    Prep the Ingredients: Chop the onion, mince the garlic, and have your mixed veggies ready. This will help streamline the cooking process.

      Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

        Sauté Aromatics: In the same skillet, add sesame oil. Add the chopped onion and garlic, sautéing for about 2 minutes until fragrant.

          Add Vegetables: Toss in the mixed vegetables and continue to sauté for another 3-4 minutes until they are tender.

            Fry the Rice: Push the vegetables to one side of the skillet. Add the cooked rice and break it apart with a spatula. Mix the rice with the vegetables and let it fry for a couple of minutes without stirring, allowing it to get a bit crispy.

              Scramble the Eggs: Pour the beaten eggs onto the rice and scramble them gently. Once they're partially cooked, mix everything together.

                Combine and Season: Add back the cooked chicken to the skillet. Drizzle soy sauce over the rice and mix well. Taste and adjust with salt and pepper as needed.
