1 lb Italian sausage (mild or spicy)

2 cups broccoli florets

1 cup bell peppers (red, yellow, and green), cut into strips

1 cup zucchini, sliced

1 cup cherry tomatoes, halved

1 red onion, cut into wedges

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Balsamic glaze (optional, for drizzling)

Preheat the oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the ingredients: In a large bowl, combine the broccoli, bell peppers, zucchini, cherry tomatoes, and red onion. Drizzle with 2 tablespoons of olive oil, sprinkle with oregano, basil, salt, and pepper. Toss everything together until well coated.

      Add the sausage: Cut the Italian sausage into 1-inch pieces and add them to the vegetable mixture. Drizzle the remaining tablespoon of olive oil over the sausage and toss everything to combine.

        Spread on the baking sheet: Transfer the mixture to the prepared baking sheet, spreading it out in a single layer for even roasting. Make sure the sausages and veggies are not overcrowded; use two sheets if necessary.
