Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

For the Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1/2 red bell pepper, diced

1 jalapeño, seeded and minced (adjust for desired heat)

1/4 cup cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

Salt and pepper to taste

For Serving:

2 cups cooked quinoa (or rice)

1 avocado, sliced

Fresh cilantro for garnish

Lime wedges for serving

Prepare the Shrimp: In a bowl, combine the shrimp, olive oil, minced garlic, chili powder, cumin, salt, pepper, and lime juice. Toss until the shrimp are well coated. Allow to marinate for about 15-20 minutes.

    Make the Mango Salsa: In a separate bowl, mix together the diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and a pinch of salt. Stir gently and set aside to allow the flavors to meld.

      Prepare the Lime-Chili Sauce: In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, salt, and pepper. Adjust seasonings to taste and refrigerate until ready to use.

        Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp and sauté for about 2-3 minutes on each side or until the shrimp are opaque and cooked through. Remove from heat.
