For the Shrimp:

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon sea salt

¼ teaspoon black pepper

½ teaspoon cayenne pepper (optional for heat)

For the Avocado:

2 ripe avocados, diced

Juice of 1 lime

Salt to taste

For the Mango Salsa:

1 ripe mango, diced

½ red bell pepper, finely chopped

¼ red onion, finely chopped

1 jalapeño, seeded and minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

½ cup Greek yogurt or sour cream

2 tablespoons lime juice

1 teaspoon chili powder

1 teaspoon honey or agave syrup

Salt and pepper to taste

For Serving:

Cooked quinoa or rice (optional)

Fresh cilantro, for garnish

Lime wedges, for garnish

Prepare the Shrimp: In a mixing bowl, combine the olive oil, smoked paprika, garlic powder, sea salt, black pepper, and cayenne pepper, if using. Add the shrimp and toss to coat well. Let marinate for 15 minutes.

    Make the Mango Salsa: In a medium bowl, combine the diced mango, red bell pepper, red onion, jalapeño, and cilantro. Drizzle with lime juice and sprinkle with salt. Toss gently to combine. Adjust seasoning to taste and set aside.

      Prepare the Lime-Chili Sauce: In a small bowl, whisk together the Greek yogurt (or sour cream), lime juice, chili powder, honey or agave, and a pinch of salt and pepper. Mix until smooth and well combined, then set aside.
