2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup sugar (adjust to taste)

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup milk (or dairy-free alternative)

1 large egg

1 teaspoon vanilla extract

1/2 cup chopped walnuts or chocolate chips (optional)

Vegetable oil for frying

Powdered sugar, for dusting

Instructions
 

In a large bowl, combine the mashed bananas, sugar, baking powder, cinnamon, and salt. Mix until well combined.

    In a separate bowl, whisk together the milk, egg, and vanilla extract.

      Gradually add the wet ingredients to the dry mixture, stirring until just combined. If using, fold in the chopped walnuts or chocolate chips at this stage.

        Heat a skillet over medium heat and add enough vegetable oil to coat the bottom.

          Once the oil is hot, drop spoonfuls of the batter into the skillet, ensuring enough space between each fritter to allow for flipping.

            Cook for about 2-3 minutes on each side, or until golden brown. Adjust the heat as needed to prevent burning.

              Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil.

                Dust with powdered sugar before serving.
