4 boneless, skinless chicken thighs

1 can (14 oz) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 fresh red chili, chopped (adjust based on heat preference)

1 tablespoon paprika

1 teaspoon ground cumin

1 teaspoon turmeric powder

Salt and black pepper, to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Marinate the Chicken: In a bowl, combine the chicken thighs, lime juice, paprika, cumin, turmeric powder, salt, and pepper. Allow it to marinate for at least 30 minutes for the flavors to meld.

    Prepare the Base: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Create the Sauce: Add minced garlic and red bell pepper to the skillet. Cook for another 3 minutes until the peppers have softened. Stir in the chopped chili for an added kick.

        Cook the Chicken: Push the vegetable mixture to the side of the skillet and add the marinated chicken thighs. Sear each side for about 5 minutes until they are golden brown.

          Add Coconut Milk: Pour in the coconut milk, ensuring the chicken is covered. Bring to a gentle simmer and reduce the heat to low. Cover and let it cook for 20-25 minutes, or until the chicken is cooked through and tender. Stir occasionally.

            Finishing Touches: Taste and adjust the seasoning, adding more salt, pepper, or lime juice if necessary.
