1 lb (450g) boneless, skinless chicken thighs

1 can (13.5 oz) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

2-3 tablespoons Brazilian red chili paste (or to taste)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon fresh lime juice

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prepare the Marinade: In a bowl, combine the chicken thighs with coconut milk, Brazilian red chili paste, ground cumin, smoked paprika, lime juice, salt, and pepper. Mix well to ensure the chicken is evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours.

    Sauté Aromatics: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Cook Chicken: Remove the marinated chicken from the refrigerator and add it to the skillet with the sautéed onions and garlic. Save the marinade for later. Cook the chicken for about 6-8 minutes on each side, until browned and cooked through.

        Add Sauce: Pour in the reserved marinade and bring to a simmer. Reduce the heat to low and let it cook for an additional 10-15 minutes, allowing the sauce to thicken and flavors to meld. Stir occasionally to prevent sticking.
