Spicy Jalapeno Chicken

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

3 jalapenos, finely chopped (seeds removed for less heat)

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lime

1/4 cup fresh cilantro, chopped

1/2 cup shredded pepper jack cheese (optional)

Sour cream, for serving (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine the olive oil, chopped jalapenos, minced garlic, smoked paprika, ground cumin, chili powder, salt, black pepper, and lime juice. Add the chicken thighs to the bowl and coat them well with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, shaking off any excess. Grill or cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely browned.

      Add Cheese (Optional): If you want to top the chicken with cheese, sprinkle the shredded pepper jack cheese over the pieces in the last 2 minutes of cooking, covering the grill or skillet to melt the cheese.

        Serve: Once cooked, remove the chicken from the grill or skillet, and let it rest for a few minutes. Slice the chicken and serve topped with fresh cilantro and a dollop of sour cream if desired.
