Spicy Jalapeno Chicken

1.5 pounds boneless, skinless chicken thighs

2 tablespoons olive oil

3 fresh jalapeños, sliced (adjust for heat preference)

4 cloves garlic, minced

1 small onion, finely chopped

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lime

1/4 cup fresh cilantro, chopped (for garnish)

Sliced avocado (optional, for serving)

Cooked rice or quinoa (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken thighs, olive oil, minced garlic, smoked paprika, ground cumin, chili powder, salt, black pepper, and lime juice. Mix well until the chicken is evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes, preferably overnight for deeper flavor.

    Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the chopped onion and sliced jalapeños. Sauté until the onion becomes translucent and the jalapeños soften, about 5 minutes.

      Cook the Chicken: Push the sautéed onion and jalapeños to the side of the skillet. Add the marinated chicken thighs to the center of the skillet. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

        Combine Everything: Once the chicken is fully cooked, mix the jalapeños and onion back with the chicken. Cook together for an additional 2 minutes to let the flavors mingle.
