Spinach and Feta Quesadillas (20 minutes)

Featuring fresh spinach, creamy feta, and gooey mozzarella wrapped in crispy tortillas, they’re a crowd-pleaser. With just a handful of ingredients, this dish comes together quickly in under 30 minutes. Serve warm with sour cream and salsa for an extra touch. Ideal for quick lunches or snacks, these quesadillas are sure to satisfy your cravings!

Ingredients
  

2 cups fresh spinach, roughly chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Sour cream and salsa, for serving (optional)

Instructions
 

Prepare the Filling: In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

    Cook the Spinach: Add the chopped spinach to the skillet and cook for 2-3 minutes until wilted. Season with salt, pepper, and red pepper flakes (if using). Remove from heat and let cool slightly.

      Combine with Cheese: In a bowl, mix the wilted spinach with feta and mozzarella cheese until well combined.

        Assemble the Quesadilla: Heat a non-stick skillet or griddle over medium heat. Place one tortilla in the skillet, and evenly spread one-fourth of the spinach and cheese mixture on one half of the tortilla. Fold the other half over to create a semi-circle.

          Cook the Quesadilla: Cook for about 3-4 minutes on one side until golden brown and crisp. Carefully flip and cook for another 3-4 minutes on the other side. Remove from heat and repeat with the remaining tortillas and filling.

            Serve: Cut each quesadilla into wedges and serve warm with sour cream and salsa on the side, if desired.
