Strawberry Peach Crisp

For the Fruit Filling:

2 cups fresh strawberries, hulled and halved

2 cups fresh peaches, peeled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

Pinch of salt

For the Crisp Topping:

1 cup old-fashioned rolled oats

1/2 cup all-purpose flour

1/2 cup packed brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup chopped pecans or walnuts (optional)

Instructions
 

Prepare the Fruit Filling:

    - In a large mixing bowl, combine the halved strawberries and sliced peaches.

      - Add the granulated sugar, lemon juice, cornstarch, vanilla extract, and a pinch of salt. Toss gently until the fruit is well-coated and set aside to let the juices mingle while you prepare the topping.

        Make the Crisp Topping:

          - In another bowl, mix the rolled oats, flour, brown sugar, ground cinnamon, and salt.

            - Pour in the melted butter and stir until the mixture is crumbly. If you're using nuts, fold them in at this stage.

              Assemble the Crisp:

                - Preheat your oven to 350°F (175°C).

                  - In a greased 9x9-inch baking dish (or equivalent), spread the fruit mixture evenly across the bottom.

                    - Sprinkle the crisp topping over the fruit mixture, ensuring it covers the fruit completely.

                      Bake:
