Ingredients

2 large red onions, thinly sliced

2 tablespoons sumac

1 tablespoon olive oil

1 teaspoon sea salt

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley (for garnish)

A pinch of black pepper

Optional: 1/2 teaspoon chili flakes (for a spicy kick)

Instructions

Prepare the Onions: Begin by peeling the red onions and slicing them thinly. You can use a mandoline for even slices if you have one.

Mix Ingredients: In a bowl, combine the sliced onions, sumac, olive oil, sea salt, lemon juice, and black pepper. If you'd like a little heat, add the chili flakes now.

Massage the Mixture: Using your hands, gently massage the mixture into the onions. This will help to soften the onions and release their flavors while allowing the sumac to coat them well.

Marinate: Cover the bowl and let the onions marinate at room temperature for 30 minutes. This enhances their flavor and tenderness. If you have extra time, refrigerating them for a couple of hours or overnight will deepen the taste.

Serve: Once marinated, give the onions a quick toss. Serve them as a tangy topping on grilled meats, in wraps, or as part of a mezze platter. Garnish with freshly chopped parsley for an added pop of color and freshness.
