Ingredients

2 large red onions, thinly sliced

2 tablespoons sumac

1 tablespoon olive oil

1 teaspoon sea salt

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, chopped (for garnish)

Pinch of black pepper

Instructions

In a mixing bowl, combine the sliced red onions with sea salt and let them sit for about 10 minutes. This will help to draw out excess moisture and soften the onions.

After 10 minutes, add olive oil, sumac, and lemon juice to the onions. Toss everything together until the onions are well coated.

Let the onion mixture marinate for at least 20 minutes at room temperature to allow the flavors to meld. If you have time, refrigerating them for a few hours or overnight will enhance the taste even more.

Just before serving, give the mixture a gentle toss. Transfer the sumac onions to a serving dish and sprinkle with freshly chopped parsley and black pepper for garnish.

Serve the sumac onions as a vibrant side dish or a topping for grilled meats, salads, or flatbreads.
