Ingredients
  

1 lb boneless, skinless chicken thighs

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce

1/4 cup honey

2 tablespoons sriracha (adjust for spiciness)

1 tablespoon lime juice

1 tablespoon fish sauce (optional)

1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)

Fresh cilantro leaves, for garnish

Cooked jasmine rice or rice noodles, for serving

Lime wedges, for serving

Instructions
 

Marinate Chicken: In a large bowl, combine the soy sauce, honey, sriracha, lime juice, and fish sauce. Add the chicken thighs and coat them well. Let this marinate for at least 30 minutes or up to 2 hours in the refrigerator for maximum flavor.

    Prepare Vegetables: While the chicken marinates, slice the bell peppers and onion. Mince the garlic and grate the ginger.

      Cook Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken thighs (reserve the marinade for later) and cook for about 5-7 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the sliced onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant. Then add the bell peppers and cook for another 4-5 minutes until they are tender-crisp.

          Add Sauce: Pour the reserved marinade into the skillet with the vegetables. Bring it to a simmer, and let it cook for about 3 minutes.

            Thicken Sauce: Stir in the cornstarch mixture, and continue to cook, stirring, until the sauce thickens, about 1-2 minutes.

              Combine and Serve: Return the cooked chicken to the skillet, coating it in the sweet and spicy sauce. Cook everything together for an additional minute to heat through.
