Ingredients

8 oz (225g) spaghetti or egg noodles

4 tablespoons unsalted butter

6 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

¼ teaspoon red pepper flakes (optional)

2 green onions, chopped

Freshly ground black pepper, to taste

Grated Parmesan cheese (for serving, optional)

Fresh cilantro or parsley, for garnish (optional)

Instructions

Cook the Noodles: In a large pot, bring salted water to a boil. Add the spaghetti or egg noodles and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

Prepare the Garlic Butter: In a large skillet over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant—be careful not to burn the garlic!

Mix the Sauces: Reduce the heat to low and add the soy sauce, oyster sauce (if using), sesame oil, and red pepper flakes. Stir to combine the ingredients well.

Combine Noodles and Sauce: Add the cooked noodles to the skillet, tossing them in the garlic sauce until evenly coated. If the noodles seem dry, add a splash of the reserved pasta water a little bit at a time until you reach your desired consistency.

Finish with Green Onions: Toss in the chopped green onions and mix again. Season with freshly ground black pepper to taste.

Serve: Transfer the garlic noodles to serving plates. Optionally, sprinkle with grated Parmesan cheese and garnish with fresh cilantro or parsley.
