Ingredients

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

1 cup milk

1/4 cup vegetable oil (or melted butter)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips (plus more for topping)

Optional: Whipped cream and fresh berries for serving

Instructions

Mix Dry Ingredients: In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the egg, milk, vegetable oil (or melted butter), and vanilla extract until fully combined.

Combine Mixtures: Slowly pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay. Fold in the chocolate chips.

Preheat Pan: Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil or butter.

Cook Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until the other side is set and lightly browned.

Serve: Remove from pan and keep warm while you cook the remaining pancakes. Stack them on a plate, and top with additional chocolate chips, whipped cream, or fresh berries as desired.

Enjoy! Serve immediately with syrup, or your favorite toppings.
