4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1 tablespoon soy sauce

2 tablespoons honey

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon ginger, grated

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the pineapple juice, soy sauce, honey, olive oil, minced garlic, grated ginger, red pepper flakes, salt, and pepper. Whisk everything together until well combined.

    Coat the Chicken: Place the chicken breasts in a resealable bag or a shallow dish. Pour the marinade over the chicken, making sure every piece is coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to overnight for deeper flavor).

      Preheat the Grill: If you’re grilling the chicken, preheat your grill to medium-high heat. Alternatively, you can cook the chicken in a skillet over medium heat.

        Cook the Chicken: Remove the chicken from the marinade, allowing any excess to drip off. Grill or pan-sear the chicken for about 6-7 minutes on each side, or until it's fully cooked and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Prepare the Glaze: While the chicken is cooking, pour the leftover marinade into a small saucepan. Bring it to a boil over medium-high heat, then reduce to a simmer and let it cook for about 5 minutes until slightly thickened.

            Glaze the Chicken: Brush the thickened glaze onto the chicken during the last minute of cooking. This will create a beautiful, sticky layer on the chicken.
