Tuscan Chicken Pasta Recipe

12 oz. fettuccine or penne pasta

2 tablespoons olive oil

1 pound chicken breast, sliced into strips

Salt and pepper to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

½ cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon dried basil

1 teaspoon dried oregano

Fresh basil leaves for garnish

Crushed red pepper flakes (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken strips with salt and pepper. Add them to the skillet and cook for 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Then, add the cherry tomatoes and cook for 3-4 minutes until they start to soften.

        Add Spinach and Cream: Stir in the spinach leaves and let them wilt. Then, pour in the heavy cream, and add the dried basil and oregano. Mix well until combined.

          Combine Ingredients: Return the cooked chicken to the skillet. Add the drained pasta, tossing everything together. If the mixture is too thick, gradually add the reserved pasta water until you reach the desired consistency.

            Add Cheese: Sprinkle in the grated Parmesan cheese, stirring until it melts and coats the pasta.

              Serve: Serve hot, garnished with fresh basil leaves and a sprinkle of crushed red pepper flakes if desired.
