White Bean and Pesto Bake

Ingredients
  

2 cans (15 oz each) of white beans (cannellini or great northern), drained and rinsed

1 cup basil pesto (store-bought or homemade)

1 cup diced cherry tomatoes (about 1 cup)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (Panko for extra crunch)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish with a little olive oil to prevent sticking.

      Mix the Beans and Pesto: In a large mixing bowl, combine the drained white beans and basil pesto. Use a spatula to gently fold the beans into the pesto until evenly coated. Season with salt and pepper to taste.

        Layer the Ingredients: Spread half of the white bean and pesto mixture evenly in the bottom of the prepared baking dish. Top with half of the diced cherry tomatoes and half of the mozzarella cheese.

          Add Another Layer: Add the remaining white bean and pesto mixture on top of the first layer. Follow with the remaining cherry tomatoes and mozzarella cheese.

            Finish with Toppings: In a small bowl, mix together the breadcrumbs, grated Parmesan cheese, and olive oil until the crumbs are well coated. Sprinkle this mixture evenly over the top of the bake for a delightful crunch.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown, and the breadcrumbs are crispy.

                Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm as a main dish or a hearty side.
